How do you decide what to open on a Tuesday night? With so many incredible options, it’s never an easy choice, but when you hit a milestone, you reach for something truly special.
When Corollary first announced their X-OMNI Blanc de Blancs, I didn’t hesitate. I secured bottles for an upcoming dinner without even tasting it. I already knew the vineyard was exceptional, and Dan and Jeanne’s winemaking is nothing short of extraordinary. Put the two together, and magic is inevitable.
Taking inventory of my cellar, I found five bottles: three 2018s and two 2019s. Naturally, I reached for a 2018. Now, I’m eagerly awaiting the Spring release to add the 2020s to this growing vertical.
If you haven’t yet discovered Corollary, do yourself a favor and book a tasting. And if you already know the powerhouse duo behind this label, then you get it.
Cheers to ! 🥂✨
