Tasting Notes
Any night is a perfect night to saber a bottle of Sparkling, but it’s Wednesday already, and I am doing my best to take advantage of every summer night before leaves start filling up the backyard.
Tonight’s choice was Dion’s 2018 Brut with 94 + 1% Pinot Noir and 5% Chardonnay. The labor of love Beth and Kevin put into their Sparkling program shows up in the glass with vivid color and the tiniest of bubbles. I enjoy how the 5% Chardonnay tames the roughness of Pinot Noir, leaving a crisp, smooth finish and a delightful acidic finish showing age-worthy potential.
We are seeing aged Pinot in Oregon along with aged Chardonnay and tiny amounts of aged Riesling. Next up is Sparkling. I am telling you we are in for a treat in the next 10+ years!
