Tasting Notes

Over the weekend, while I was at Costco, I noticed they had a Penfolds Bin 389 Cab/Shiraz Blend (practically a 50/50). It has been ages since I’ve had a Penfolds, and truth be told, I don’t remember what I had. I was on a Shiraz kick for the longest time and drank quite a bit of Penfolds. For some reason, it was easier to procure 15 years ago. I also don’t remember it being $45/bottle either. After many years, I was curious to explore this label and had to buy a bottle. Here are my thoughts: I drank the bottle over two days, and the second day, I felt like I could appreciate the full potential of what I was drinking. I should have saved some to observe changes on day three. At any rate, the color is what you would expect from a Cab/Shiraz blend super dark in color all around. On entry, this wine slowly dances onto your mid-palate with big structured tannins and nice acidity. It’s a bit difficult to enjoy the finish with the tannins pitching a tent and staying for the weekend. I should have grilled up a big ole’ ribeye on the grill, and the tannins would never have seen what him ‘em. I will have to make another trip to Costco, purchase a few bottles, and let these bad boys sit for quite a while to see true magic transform! . . . . 🍷
