Tasting Notes
This college football season has equated to popping the cork on a bottle of Sparkling. With tonight’s game between GA and TCU, I had to continue the season’s tradition!
A couple of weeks ago, I visited Domaine Divio and was greeted with a glass of the 2019 Willamette Valley Cremant. This is quite nice with a blend of Pinot Noir and Chardonnay, especially for a Monday night of Championship football. However, what I find most intriguing is the steady concentration of bubbles from the center of the glass. For the mid-palate, this Sparkling shows a spectacular balance between the Pinot Noir and Chardonnay with a slight twinge on the Pinot Noir side of the house, showing how robust and the age-worthy potential this Cremant has. For the finish, you have to pay extra special attention to the slightest bit of a tannin structure sneaking in behind the Chardonnay. I enjoy the structure and will be holding on to the other bottle of this for years to come!
