2018 X-OMNI Blanc Review

What does one do when there is a little less than a glass left of Sparkling after A.J.’s Wine Dinner on Friday? Well, you drink it, of course! When I picked up the 2018 X-OMNI Blanc de Blanc from Dan and Jeanne at @corollarywines , I was instructed to open it the morning of the event. I gave it heavy consideration, but my overthinking of operational details got in the way. About 30 minutes before everyone arrived, the corks were popped, I poured a little to “test,” and I was way beyond pleased! When everyone arrived Friday night, I poured the X-OMNI, and not a single person was disappointed. Maybe it was the hugs I gave out as part of the greeting, but I doubt it. Tasting this about 24 hours later, I was super surprised how much more character was in the glass. I should have taken notes, but I didn’t. So you are just going to have to trust me. The X-OMNI is a bottle you will want to buy multiple bottles and save for a while. Do you want to know more details about the dinner last Friday?
