2018 X-OMNI Blanc Review

Today was a good day, even though the fall chill lingered in the air this morning until early afternoon. So I had to take advantage of the sun as much as possible by sitting outside on the back deck coding away while watching TN Football. Yes, they will win today, but next week will decide how the remainder of the season will play out. Enough about football. Let’s talk wine! I have mentioned the 2018 X-OMNI Blanc de Blanc from Corollary time and time again! Why do I like it so much? We all hear wine starts in the vineyard and the fruit from the X-OMNI vineyard is spectacular, just like the sister vineyard X-NOVO. I was reminded today that Abbott Claim has a Chardonnay from the X-OMNI vineyard, and dang, it is also spectacular. I need to hide the other bottles because the acidity structure is off the charts! With the explosion of Oregon Sparkling, we need to find ways to hold onto these Bubbles to see how they age!
