Tasting Notes

While pouring the 2017 Cuvee One Extended Tirage Sparkling from Corollary (@corollarywines), I couldn't help but think of a Salt-N-Pepa chorus. It went something like this: Let's talk about mousse, baby. Let's talk about you and me. Let's talk about all the good things. Although those aren't the actual lyrics, I like to create my own lyrics. Mousse refers to the foam that forms after pouring a sparkling wine or champagne. It has a light and airy texture and can also describe the sensation when the foam enters the mid-palate. Recently, I came across a newsletter from 2021 while preparing for a podcast episode. It reminded me of mousse. I haven't been paying much attention to mousse or the size of the bubbles in the glass and the texture on the mid-palate. Who doesn't love those tiny bubbles? This was my first time truly experiencing the 2017 Cuvee One Extended Tirage with a little time reflect over several days. Jeanne and Dan are doing incredible things, and I am ecstatic for them as they prepare to open their new tasting room in the Spring. It's so exciting that it feels like my happiness for them is overflowing! Returning to mousse, even on the second day, this wine maintains its impressive mousse coverage. The tiny bubbles tantalize every sensation on the mid-palate. 👇 👇 👇 👇 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 🍷 Would you like to get a Saturday morning email once a month to read with your coffee giving you insider tips on events, news, and an in-depth perspective on a winery?
